For best texture, use freshly boiled potatoes and mash them lightly for a chunky bite. Frozen peas can be used directly without thawing. Sauté onions till translucent—not browned—for a soft and sweet base. Adjust spice level by increasing green chillies or adding red chilli powder. This masala can also be used inside sandwiches, kathi rolls, or puff pastries. Leftovers taste great the next day when reheated with a touch of ghee.

INGREDIENTS
• 2 tbsp oil
• 1 tsp mustard seeds
• 1 tsp cumin seeds
• 2 green chillies, chopped
• 1 handful curry leaves
• 1 medium onion, sliced
• 30 grams frozen green peas
• 2 small tomatoes, finely chopped
• 1 tsp turmeric powder
• 1 tsp salt (adjust to taste)
• 3 medium boiled potatoes
• 3 tbsp chopped coriander leaves
• 1 tsp chaat masala
1 tsp red chilli powder

PREPARATION STEPS
1. Heat 2 tbsp oil in a pan.
2. Add mustard seeds and cumin seeds. Let them crackle.
3. Add green chillies and curry leaves. Sauté briefly.
4. Add sliced onion and sauté until it’s about 80% cooked.
5. Mix in the frozen green peas and fry for 3 minutes.
6. Add chopped tomatoes and sauté till soft.
7. Add turmeric powder and salt. Mix well.
8. Add boiled potatoes and mash gently into the mixture.
9. Finally, add coriander leaves and red chilli powder, chaat masala.
10. Mix everything well and serve hot with dosa or roti!
