Step-by-Step Recipe : Let’s Gourd This Party Started!
INGREDIENTS
• Oil – 2 tbsp
• Shah Jeera – 1 tsp
• Mustard Seeds – 1 tsp
• Curry Leaves – a handful
• Garlic – 1 tbsp, finely chopped
• Ridge Gourd – 350 gms, peeled and chopped into small pieces
• Homemade Instant Sambar Powder – 1 tbsp
• Salt – to taste
• Coriander Leaves – 1 tbsp, chopped

PREPARATION STEPS
1. Heat 2 tbsp oil in a pan.
2. Add shah jeera, mustard seeds, and curry leaves. Let them splutter.
3. Add chopped garlic and sauté for a minute until it turns golden and aromatic.
4. Add the chopped ridge gourd and cook until it’s 80% done, stirring occasionally.
5. Now add 1 tbsp of homemade instant sambar mix. Mix well to coat the ridge gourd evenly.
6. Cook for a few more minutes until the ridge gourd is fully done and the masala is well absorbed.
7. Finally, add salt to taste and sprinkle chopped coriander leaves.
8. Mix gently and turn off the flame.
