​​​For best results, use tender ridge gourd and cook it covered to retain moisture. Don't overcook after adding the sambar powder—just enough for the masala to blend. Adjust spice by increasing or decreasing the sambar mix. A splash of tamarind water can add a tangy twist. For extra flavor, add a pinch of jaggery. This curry pairs beautifully with hot rice and ghee or soft phulkas for a comforting meal.

INGREDIENTS

• Oil – 2 tbsp

• Shah Jeera – 1 tsp

• Mustard Seeds – 1 tsp

• Curry Leaves – a handful

• Garlic – 1 tbsp, finely chopped

• Ridge Gourd – 350 gms, peeled and chopped into small pieces

• Homemade Instant Sambar Powder – 1 tbsp

• Salt – to taste

• Coriander Leaves – 1 tbsp, chopped

Simple and tasty ridge gourd curry with garlic and sambar masala seasoning.

PREPARATION STEPS

1. Heat 2 tbsp oil in a pan.

2. Add shah jeera, mustard seeds, and curry leaves. Let them splutter.

3. Add chopped garlic and sauté for a minute until it turns golden and aromatic.

4. Add the chopped ridge gourd and cook until it’s 80% done, stirring occasionally.

5. Now add 1 tbsp of homemade instant sambar mix. Mix well to coat the ridge gourd evenly.

6. Cook for a few more minutes until the ridge gourd is fully done and the masala is well absorbed.

7. Finally, add salt to taste and sprinkle chopped coriander leaves.

8. Mix gently and turn off the flame.
