Use fresh drumsticks for the best flavor – frozen ones just don’t have the same vibe! Always strain the pulp after blending to get that silky-smooth texture; no one wants a chewy soup. Going vegan? Swap paneer for tofu – it works like a charm. Want a richer taste? Stir in a splash of coconut milk. And don’t underestimate the magic of roasted watermelon seeds – toast them for extra crunch. Bonus: a dash of lemon juice or coriander at the end gives a zesty finish!

  • 250 ml water (for pressure cooking)
  • 50 ml water (for blending)
  • ½ tablespoon butter
  • ½ tablespoon garlic (finely chopped)
  • ½ teaspoon Kashmiri chili powder
  • 2 pinches black pepper powder
  • 50 g paneer (small chopped pieces)

  • 1 tablespoon spring onion (chopped)
  • 1 tablespoon roasted watermelon seeds
  • ½ teaspoon green chilies (chopped)
  • Salt to taste
A bowl of thick, creamy drumstick soup topped with spiced paneer, herbs, and seeds – flavorful, protein-rich, and ideal for vegetarians.

PREPARATION STEPS

 1.Pressure Cook Drumsticks:

Add the drumstick pieces and 250 ml water to a pressure cooker. Cook for 5 whistles. Strain the cooking water and set it aside.

2. Make Drumstick Paste:

Transfer the cooked drumsticks to a mixer jar, add 50 ml water, and grind into a fine paste. Strain this paste through a sieve or muslin cloth, squeezing out all the juice. Discard the pulp.

3.Prepare Spiced Paneer:

In a pan, heat ½ tablespoon butter. Add the paneer pieces and sauté. Sprinkle salt, Kashmiri chili powder, and parsley. Toss well and set aside.

4.Make the Soup Base:

In the same pan, add chopped garlic and green chilies. Sauté well. Pour in the strained drumstick liquid and let it come to a gentle boil. Add black pepper and adjust salt.

5.Serve:

Pour the hot soup into a bowl. Add the sautéed paneer, roasted watermelon seeds, and spring onions. Serve hot.

Yes! Just boil the drumsticks until soft. It takes a little longer, but works just as well.

Tofu or boiled sweet corn are great substitutes for paneer in this soup.

Drumsticks have fibrous pulp. Straining gives a smooth, sippable soup without rough texture.

Absolutely. Store in the fridge for 2 days. Reheat and stir well before serving.

Not mandatory, but they add a fun crunch and nutrition. Replace with roasted pumpkin or sunflower seeds if needed.
