INGREDIENTS

  

  • 1 tbsp oil
  • 1 tsp mustard seeds
  • 1 tsp jeera (cumin seeds)
  • ½ tbsp urad dal
  • Handful of curry leaves
  • 2 dry red chillies (broken)
  • 15 garlic cloves, peeled and coarsely ground
  • 2 tsp Kashmiri red chilli powder
  • 1 tsp regular chilli powder
  • ½ tsp amchoor (dry mango) powder
  • ½ tsp coriander powder
  • Salt to taste
  • 1 tbsp chopped fresh coriander

PREPARATION STEPS

  1. Heat 1 tbsp oil in a pan.
  2. Add mustard seeds and let them splutter.
  3. Add jeera, urad dal, curry leaves, and red chillies. Sauté for a minute until urad dal turns golden.
  4. Add the coarsely ground garlic and fry for just about a minute—don’t brown it too much.
  5. Switch off the stove and immediately add:
      – 2 tsp Kashmiri red chilli powder
      – 1 tsp regular chilli powder
      – ½ tsp amchoor powder
      – ½ tsp coriander powder
      – Salt to taste
      – Chopped coriander
  6. Mix well and transfer to a bowl.
  7. Serve as a side with hot rice, dosa, or curd rice. Enjoy the kick!
