INGREDIENTS
- 1 tbsp oil
- 1 tsp mustard seeds
- 1 tsp jeera (cumin seeds)
- ½ tbsp urad dal
- Handful of curry leaves
- 2 dry red chillies (broken)
- 15 garlic cloves, peeled and coarsely ground
- 2 tsp Kashmiri red chilli powder
- 1 tsp regular chilli powder
- ½ tsp amchoor (dry mango) powder
- ½ tsp coriander powder
- Salt to taste
- 1 tbsp chopped fresh coriander


PREPARATION STEPS
- Heat 1 tbsp oil in a pan.
- Add mustard seeds and let them splutter.
- Add jeera, urad dal, curry leaves, and red chillies. Sauté for a minute until urad dal turns golden.
- Add the coarsely ground garlic and fry for just about a minute—don’t brown it too much.
- Switch off the stove and immediately add:
– 2 tsp Kashmiri red chilli powder
– 1 tsp regular chilli powder
– ½ tsp amchoor powder
– ½ tsp coriander powder
– Salt to taste
– Chopped coriander - Mix well and transfer to a bowl.
